Ingredients
- 2 lbs chicken breast boneless, skinless
- 4 cloves garlic crushed
- 1 cup basil
- 1/2 tablespoon olive oil
- 1 tablespoon Walden Farms Balsamic Vinaigrette
- 1/4 cup water
- 2 cups sliced mushrooms
- 2 cups cherry tomatoes halved

Instructions
- Preheat oven to 450 degrees.
- Spray with cooking spray a glass baking dish.
- Place chicken breast in pan. In a bowl combine garlic, basil olive oil, Walden Farms Balsamic dressing, water, mushrooms and cherry tomatoes.
- Spread over the chicken and bake until the chicken is cooked, approximately 20+ minutes.

Recipe is 1 serving of 8 oz for 1 cup of veggies. Must add another cup of allowed veggies for phase 1.
Super yum! I leave out the mushrooms (my family just doesn't care for them). Our non IP guests loved it too!
I'm confused, I thought balsamic vinegar was a "no-no"?
