- Protein
- 1.5 pound turkey tenderlion
- Salad
- 4 cups cauliflower riced
- 1 cup cucumber seeded & diced
- 1 cup Roma tomatoes seeded & diced
- 4 scallions white and green parts thinly sliced
- 2 tablespoons chopped fresh parsley or fresh cilantro
- Dressing
- 2 tablespoons olive oil
- 1/2 lemon juiced
- 1 clove garlic freshly minced
- 1/2 teaspoon sea salt or to taste
- 1/4 teaspoon black pepper freshly ground to taste

Instructions
- Use a large skillet over medium heat. Add 1 tsp. olive oil. Add the riced cauliflower and stir. Rice should be al dente. Remove from heat and let cool.
- Dice cucumber, tomatoes, green onion and fresh parsley or cilantro. Add to cooled cauliflower.
- Season turkey tenderloins with salt and pepper and grill until done. Cut into bit size pieces and add to cauliflower mixture.
- Wisk dressing ingredients in a small bowl and pour over cauliflower. Stir to combine flavors, serve immediately.
