Instructions
  1. Cook bacon, then break into small pieces
  2. Preheat oven to 450 F
  3. Melt butter into small bowl, season with salt and pepper.
  4. Add cauliflower florets to casserole dish, cover with butter and bake for 20 minutes.
  5. Cover with cheese. Bake for additional 5 minutes or until cheese is melted.
  6. Once cheese is melted remove from heat, sprinkle bacon and chopped scallions over top and serve!
Recipe Notes

One head yields about 4 cups of florets. Recipe is excellent side to a lean protein like chicken breast.
