Ingredients
- 1 1/2 pound chicken breast
- 1/3 cup mint leaves fresh
- 1/3 cup cilantro freshly chopped
- 1 tsp turmeric
- 2 tsp chili powder
- 3/4 cup fat free low sodium chicken broth
- 3 cups baby bella mushrooms chopped
- 3 cups cauliflower riced
- 1 1/2 tbsp onion powder
- 2 tbsp Ginger and garlic paste
- 4 tsp olive oil
- 2 tbsp lemon juice
- 1/8 tsp sea salt to taste
- 1/2 tbsp cardamom ground
- 1/2 tbsp cinnamon ground
- 1/2 tbsp cloves ground

Instructions
- Pour olive oil on a hot pan. Add ginger garlic paste and sauté until it turns golden.
- Add cubed chicken pieces. Add salt, turmeric, biryani masala (cardamon, cinnamon, cloves) , chopped mint leaves, red chili powder and mix and sauté.
- When chicken is a little more than half way done, add chopped mushroom. Add chicken broth.
- Cover and cook on medium flame for 7 mins. Then add cauliflower rice and mix well, cook covered for 5 more mins.
- Turn off the flame and add lemon juice and fresh cilantro. Serve hot with raw onion

Biryani masala is equal portions of cardamom, cinnamon and cloves powdered
