Ingredients
- 2 pounds ground beef lean
- 2 tbsp olive oil
- 2 cups green bell pepper diced
- 3 cloves garlic minced
- 1/4 tsp black pepper freshly ground
- 2 cans diced tomatoes 1 (16-ounce) can = 2 cups undrained tomatoes
- 1 cup celery diced
- 1 cup zucchini diced
- 1 1/2 tbsp cumin or to taste
- 1-1/2 tbsp chili powder or to taste

Instructions
- Form ground beef into large patties.
- Heat oil in a heavy bottomed soup pot, and add freshly ground black pepper.
- Add bell pepper and saute 5-7 minutes. Turn heat off and stir in minced garlic.
- Grill patties until medium rare, no more than 5 minutes on each side.
- Turn heat on high under soup pot, or crock pot and place patties in with garlic, oil, and peppers.
- Break up patties into small pieces with spatula and brown meat thoroughly. Add tomatoes undrained.
- Mash and break up tomatoes with spatula.
- Add zucchini, and celery
- Mix in cumin and chili powder
- Add enough water to cover all ingredients,
- Reduce heat to low, and let simmer 2 hours or more.
Recipe Notes
Chili recipe combines 1 oz serving and 2 cups of veggies per serving ideal for anyone in phase 1 looking to spice it up!
You can skip the patty step and simply brown the hamburger in separate pan, but you must drain the fat!
Variations:
- Substitute red peppers diced for zucchini and/or celery, but don't forget to saute them
- Try really spicing it up with chili powder, red pepper flakes, and Italian seasoning!
