Meatballs
  1. Preheat oven to 400. Chop onion, mushrooms, and spinach leaves. Grate zucchini and mince garlic.
  2. Mix pork, beef, Parmesan cheese, veggies and spices evenly and create balls. Bake for 18-20 minutes at 400 on a non-stick cookie sheet.
Sauce
  1. Looking for a nice keto friendly sauce? Try Rao’s Homemade marinara sauce or Mario Batali Cherry Tomato Marinara. Don’t forget to measure and log your sauce, it is not include in the recipe!
  2. Cover with 1 oz shredded mozzarella per serving.
