Instructions
  1. In a large glass bowl, mix together lemon juice, olive oil, soy sauce, oregano, and garlic; add pork, peppers, and zucchini, stir to coat. Cover, and refrigerate for 2 to 3 hours.
  2. Preheat grill for medium-high heat. Thread pork, zucchini and peppers onto skewers.
  3. Lightly oil grate. Cook for 10 to 15 minutes, or to desired doneness, turning skewers frequently for even cooking.
Recipe Notes

Recipe makes one serving of 8 oz protein per cup of veggies.  Must add another cup of select veggies as side for phase 1 dinner. Try cooking an additional 2 cups of zucchini and 2 cups of peppers in a grill basket or on a skewer to make it a complete meal!
