Ingredients
- 1 lemon juiced
- 1/4 cup olive oil
- 1/4 cup low sodium soy sauce
- 1 teaspoon oregano dried
- 3 cloves garlic crushed
- 2 pounds pork tenderloin cut into 1 inch cubes
- 2 cups red bell pepper cut into 1 pieces
- 2 cups zucchini cut into slices

Instructions
- In a large glass bowl, mix together lemon juice, olive oil, soy sauce, oregano, and garlic; add pork, peppers, and zucchini, stir to coat. Cover, and refrigerate for 2 to 3 hours.
- Preheat grill for medium-high heat. Thread pork, zucchini and peppers onto skewers.
- Lightly oil grate. Cook for 10 to 15 minutes, or to desired doneness, turning skewers frequently for even cooking.
Recipe Notes
Recipe makes one serving of 8 oz protein per cup of veggies. Must add another cup of select veggies as side for phase 1 dinner. Try cooking an additional 2 cups of zucchini and 2 cups of peppers in a grill basket or on a skewer to make it a complete meal!
