  • 1 pound shrimp fresh medium-sized, deveined with tails off
  • 1 lemon zested then half cut into thin and other half into wedges
  • 1/8 cup olive oil
  • 4 cloves garlic minced
  • 4 sprigs thyme fresh sprigs leaves removed
  • 1/8 teaspoon sea salt or to taste
  • 1/8 teaspoon black pepper or to taste

Roast
  1. Place olive oil, garlic, thyme, 1/2 lemon juiced in a bag. Add and coat shrimp. Marinate for at least 15 minutes or up to 2 hours.
  2. Preheat oven to 400 degrees F. Spray an 8x8 glass baking pan with olive oil,
  3. Add shrimp, and half thin sliced lemons (don't squeeze them),. Bake for 8-10 minutes or until shrimp turn pink and just start to curl, check often. Season with additional salt and pepper if desired.
Grill
  1. Place olive oil, garlic, thyme, 1/2 lemon juiced in a bag. Add and coat shrimp. Marinate for at least 15 minutes or up to 2 hours.
  2. Preheat grill to 400 degrees F. Cook for 2-3 minutes on each side or until shrimp are pink and opaque.Season with additional salt and pepper if desired.
