Roast
- Place olive oil, garlic, thyme, 1/2 lemon juiced in a bag. Add and coat shrimp. Marinate for at least 15 minutes or up to 2 hours.
- Preheat oven to 400 degrees F. Spray an 8x8 glass baking pan with olive oil,
- Add shrimp, and half thin sliced lemons (don't squeeze them),. Bake for 8-10 minutes or until shrimp turn pink and just start to curl, check often. Season with additional salt and pepper if desired.
