Instructions
- Spray skillet with olive oil or gently coat with butter over medium high heat. Add chopped onion and garlic, cook for 3 minutes
- Add chopped peppers and cook for an additional 8 minutes or until soft
- Wisk eggs in bowl, season with salt and pepper.
- Reduce heat to medium, pour in eggs. Stir occasionally until done.
