- 1/2 cup Parmesan cheese grated
- 4 eggs beaten
- 1 tsp Italian seasoning
- 1/2 tsp black pepper
- 1/2 onion chopped
- 2 cloves garlic minced
- 1/2 cup zucchini grated
- 1/2 cup mushrooms chopped
- 1 cup spinach leaves chopped
- 8 oz shredded mozzarella

Meatballs
- Preheat oven to 400. Chop onion, mushrooms, and spinach leaves. Grate zucchini and mince garlic.
- Mix turkey, Parmesan cheese, veggies and spices evenly and create balls. Bake for 18-20 minutes at 400 on a non-stick cookie sheet.
